The best ramen in Sydney. Both the bonito and sardines broths are so light and tasty. The noodles are cooked to perfection. Highly recommended!!!

Had the memorable ramen experience at this modest 16 seater place in the quiet stretch of Pyrmont waterfront. The ramen here is unique in a way that the broth making technique uses coffee siphons to brewing their ramen stock to infuse the kelp and dried sardine or bonito shavings into the stock. They only offers three kinds of ramen in the menu; Katsuo (bonito), niboshi (dried sardine) and a spicy niboshi using chicken based broth. I tried the Niboshi ramen and was really impress by the light and clear aromatic broth that is smokey, rich but delicate. It came with two lengths of menma (marinated bamboo shoots), a piece of pork and chicken chashu and springy noodles and add a extra soft ramen egg. The broth is so good I finish the whole bowl of ramen and the soup. Would love to come back again and try the other two ramen.

Tasty and good value Ramen. We tried both the katsuo and niboshi ramens and they were both filled with lots of umami! Very tasty ramen broths worth trying. Note the katsuo broth is a bit more salty than the niboshi, so if after more flavor the katsuo is the go to. If after a more lighter but pure taste of the dashi broth then the niboshi is the one to choose. Chicken and pork pieces were very soft and tender. Best ramen broth in Sydney! Fried Oreos were a nice finish to our Ramens.

Delicious niboshi and bonito ramen with deep flavoured broth. Only 2 people working there so be prepared to wait. Deep fried oreo was not bad.

The food took long to arrive and the chashu wasn't particularly to my liking, yet I'm willing to go back for the broth alone. It was so clean, delicate, and as the restaurant name suggests, full of umami. If you are a fan of chicken-based broth, this is the one not to be missed.
